Banana + toffee = banoffee pie

It's been a while since i wrote a recipe here. This one is very special. Ever since I tried "Banoffee Pie" at Big Chills, I wanted to try my hand at it. Tried it for the first time and surprisingly nailed it too. Also the whole pie is for rs 1150 in big chills i managed to make this one in less than rs 300. A major win. Food economics.  Banoffee pie is a dangerous blend of cream, toffee, bananas with butter-biscuits as the base. Early Christmas baking.

What you need
For the base:
200 g, digestive biscuits
3-4 tbsp, salted amul butter, melted

For the caramel:
100 g, unsalted butter
50-75 g, dark brown sugar
1 tin of condensed milk (milk maid)
1 tsp vanilla essence

Remaining layers: 
4 small bananas
200 ml whipped cream (you can whip at home with icing sugar and vanilla essence or get some ready made whipped cream)

Assembling:
A) Put digestive biscuits and salted butter in a grinder and crush until you get a sand-like mixture. Spread the mixture in a 22cm pie tin,covering the sides as well and refrigerate for 10 minutes.

B) in a heavy bottomed pan on low flame, melt unsalted butter and brown sugar until the sugar melts completely and caramelises. Use a whip to stir at all times. Add 1 tsp of vanilla essence and the whole tin of condensed milk. Let. it come to a boil. Stir with a whip at all times. Remove from the heat and keep it aside to cool.

C) take out the biscuit-layered tin outside and start layering. Layer sliced bananas and then top with the caramel sauce. Add the last layer of whipped cream. Garnish with grated chocolate.
